PUMPKIN PANCAKES

Ingredients

  • 2 Cups all purpose flour 
  • 3 T brown sugar
  • 2 t baking powder
  • 1 t baking soda
  • 1 t ground allspice
  • 1 t ground cinnamon
  • 1/2 t ground ginger
  • 1/2 t salt
  • 1 1/2 C. milk
  • 1 C. pumpkin puree
  • 1 egg
  • 2 T vegetable oil
  • 2 T vinegar

Directions:

In a mixing bowl mix together the milk, pumpkin, egg, oil and vinegar.  In a seperate bowl combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt.  Once mixed add the pumpkin mixture just enough to combine.  Heat a lightly oiled griddle or frying pan over medium heat.  Pour or scoop the batter onto the griddle, using approximately 1/4 Cup for each pancake.  Brown on both sides and serve hot.


CHOCOLATE BISCOTTI

INGREDIENTS:

  • 2 C. Flour
  • 1/2 C. unsweetened cocoa powder.
  • 1 t. baking soda
  • 6 t. butter softened
  • 1 C. granulated sugar
  • 2 Large eggs
  • 1 C. Walnuts chopped
  • 3/4 C. semi-sweet chocolate chips.

Directions:

Preheat oven to 350 degrees.  Butter and lightly flour a large baking sheet.  Set aside for use later.

In a bowl whisk together flour, cocoa powder and baking soda.  In another bowl, with an electric mixer beat together butter and sugar until light and fluffy.  Add eggs and beat until combined well.  Stir in flour mixture to form a stiff dough.  Mix in nuts and chips.

On prepared baking sheet, with floured hands, form dough into two slightly flattened logs, each 12 inches long and 2 inches wide.

Bake logs for 20 - 25 minutes or until slightly firm to the touch.

Cool for five minutes.

On a cutting board, carefully cut biscotti diagonally into 3/4 inch slices.  Any crumbs are still great with a cup of coffee.

Place biscotti cut side down on baking sheet and bake until crisp, about 10 minutes.

Cool biscotti on a rack.  If you like these can then be sprinkled with powdered sugar or dipped in real chocolate for a triple chocolate flavor.
